How noticeable is the up in power?

So with the restoration 90% complete, I am looking at some options to start getting a little more power out of the 350 sbc my 71'. I already have a good cam, solid heads, and an Edlbrock 600...

71' Chevy-11mpg, it would probably do better if i didnt hotrod so much in it.
04' lancer is getting around 35mpg Hwy, 25-28 city
and 72' LUV is currently getting 0mpg, sitting in the shop.
What do I hunt with....long list, but ill give the short of it,
Custom 270 WIN for deer, 300 WSM for elk, Remington 870 for all birds, Remington pump 22 and savage .17 for the varmints.
Because unlike alot of people, I rebilt my 71 from the ground up by myself.Would never dream of giving it to someone else to work on.....O ya and i love rocking the old school bowtie.
