If I knew I wanted to lift it and turn it into an off-road beast, I might look into a '70's or '80's model with a solid front axle (probably 3/4 ton or heavier, too). But I don't know if there are other considerations for you that would prevent you from driving something that old.
One of the big downsides of the GMS 1/2 ton IFS is that it is so weak, no one makes aftermarket differentials for it (locker/limited slip). For that matter, people aren't too fond of the 10 bolt rear, either, especially when they put the really big tires on it. For these reasons, I'd probably strongly consider getting 2500 or heavier. Settling for a 1500 would depend greatly on how much lift and what tire size you want to end up with.

Welcome to the site!!
If I was to do it the right way it would be a 2500 Duramax Crew cab. 6" lift with 35's. Very capable offroad but still drivable around town.
Check out DWill's it is the perfect specimen.
