I was thinking of stretching to 7,000 miles on the oil change... should I reset the computer or change the oil?

I would not recommend running M1 past the 7K mile mark without sending it in for oil analysis.
If you do this it will be a tell tail sign on how long you can run your next oil change. M1 is not designed to go more than 7K miles to my knowledge this is why I recommend not doing so. Only go as long as the manufacture of the oil recommends.Iif you want extended drain interval up to and over 25K miles use AMSOIL.

How much does the amsoil for my 2500 diesel run a quart? I know that there is a 15k and 25k amsoil but how much does it go for? I think someone told me that it take 10qts to fill it back up. Are the oil filters expensive?

Every 3 to five thousand miles oil and filter for me. My dad got me trained on that cycle, and since I'm 16 with a bad paying job he pays for the oil and filter as long as I change it.

I shoot for 2500 miles. Valvoline MaxLife synthetic blend 5W-30. Just switched to WIX filters. I bought the truck with 75K, now has 135K. Bought Tahoe with 145K, now has 175K. Neither engine makes a peep, and both start burning oil after 3K.
