Antifreeze and a pressurized cooling system raises the boiling point of water.
Here is a chart of the boiling point for anti-freeze/water mixes.
Add a pressure cap on the radiator and with a 70/30 antifreeze mix the boiling point rises closer to 270.
210 is not a problem. If you want a lower idle temp you could try a 160 or 180 deg tstat.
Be advised that emission equipment is designed to operate at higher temps so a lower temp tstat may cause other symptoms.

Yeah i think thats normal for the new trucks. Both my buddies denali and silverado are right at 210 when i drive them about, and there both 07+ so i'd say its normal. And my silverado stays around 180-190 usually.2000 Chevy Silverado 1500 5.3L Z71 - 4x4
