Oh, by the way. Yuck.
Put this all in a very large bowl
Two 12 oz boxes of tri-color rotini pasta, aldente, rinsed cold
One large red bell pepper, diced
One large yellow bell pepper, diced
1/2 cup red onion, diced
One can bush's black beans, uncooked, rinsed, drained
One can bush's dark red kidney beans, uncooked, rinsed, drained
A large amount of fresh cilantro leaves, 1 loose cup, coarsely chopped.
About 20 slices of jalapeno peppers, coarsely chopped. (whatever the fans of HOT say, mild tastes better.)
Now make the dressing.
Juice of six limes
1/2 cup corn oil
Shot of tequila (optional)
1/2 teaspoon salt
Three teaspoons of ground cumin.
Pour dressing over salad, stir up, chill in fridge for 1 hour.
Feeds 4 to 6 (or two of me)
