We have a 2008 suburban ltz 4x4 -

1. Is there a way I can deactivate the engine switching to run on 4 cylinders?
I want it to stay in v-8 mode all the time like my 2001 burb.

2. Can I somehow re-program the radio/navigation system to play the DVD while the vehicle is in gear/moving?
My wife want to watch the movie while I drive : )

Welcome to the club. Can't help with the DVD, but a Diablo Preditor or Diablo Trinty can turn off the DOD so it will run in 8cyl. mode.

Can I ask why you want to do this? Oh and sorry I have know idea how to do this. Other than keeping my foot in the throttle:)

Be careful about the DVD thing. It may be illegal to operate the vehicle with a mobile screen that is viewable to the driver. I believe some places it is a ticketable offense.

To get around this though, check the parking brake cable, or the park lever. I believe most of the mobile systems are tied into the parking break and designed to only play with the brake is engaged. If you install a system yourself, you can just bypass this part of the setup in most cases.
