I am looking at getting those awful street tires off my z71 I'm looking at the BFG All terrain T/A KO's something that will handle occasional offroad use but still be good for my average street driving. I will be running the stock 18 inch z71 wheels and will be leveling my truck in the next couple weeks. I was wondering will 285/65/18's or 275/70/18's fit my truck with the level kit without much rubbing or preferably none at all? and if so how much work am I looking at to trim them? Also does anyone have those tires and how are they in the mud/snow?

You should be fine with the leveling kit and the 285/65-18.

You shouldn't need any trimming at all, with a leveling kit you'll have plenty of room for those tires. I have the same tires and i couldn't be happier with the mud and snow performance, the tread life is great and they're pretty quiet on road. Go for the KO's, you won't be disappointed.
