95 5.7L TBI K1500 Issues when warm and under load

Hi! First post so bear with me. A little about my truck...1995 K1500 5.7L 350 TBI.

What I have have done or had done: Replaced TPS, MAP sensor, cap and rotor, plugs and plug wires, Coolant temp sensor, EGR, Ignition Coil. Exhaust Manifold Gaskets replaced.

What is going on: When the truck is dead cold, it runs well. After a while, once the truck is clearly up to temp, it will cough and hesitate, but only when its under somewhat heavier acceleration (what I call "under load")...especially on hills when I am trying to maintain my current speed. On warm/hot days obviously it does it a lot sooner. Cold days it takes quite a while before itll start doing it. Normally, once it starts happening it will either continue to get worse or itll just do it if i use a little more throttle than it likes. Sometimes, pulling over and shutting it off and letting it sit for half a minute will help. The truck never hesitates to start each morning. And when its warm...it also never hesitates to start.

The sounds it makes is kind of hard to describe. When I took it into a shop, I originally thought it was backfiring into the intake. We found out it was the exhaust manifold gaskets were gone. Got those replaced and the truck doesn't really hesitate and the motors gotten a lot quieter and feels a lot more healthier. It no longer sounds like its backfiring. it sounds a lot more muffled. But the closest i can describe it as coughing.

I'm just kind of at a loss. I've been fighting this for a while. I have limited automotive knowledge. I actually bought the truck because I wanted to learn about engines and repairing them. So, if anyone could point me in the direction i should go. Or, if they've had this issues or something similar before help me out. I would absolutely ANY help or tips or guidance.

Hello! I replaced the one closest to the thermostat. As for fuel pressure, i havent been able to check that yet. I want to get a tester soon because im fairly certain the pump is either original or hasnt been replaced anytime recent. I bought the truck used, and while some things were certainly replaced...many things are original. Mostly everything the previous owner replaced were kinda like things i did...easily replaced items.
