I drive a 97 GMC Sierra 2500, on my way in to work the engine randomly just died. All the electrical was still running just fine. Tried to restart and the engine would crank but had trouble starting. Once it was running it would die again when I shifted into drive from park. Did this twice and then drove fine all the way to work. I hooked up my scanner to it and only came back with a PO141 and PO161. Pretty sure an O2 sensor wouldn't make my engine die.

Could be fuel pump!

Was it raining? If you have an engine with a distributor, the cap could be wet.

Was all dry, but the fuel pump wouldn't shut down the engine while it's running would it? It would just have trouble starting in the first place?

A fuel pump that won't supply sufficient fuel is no different than a tank that has run dry.

Do a pressure test.

What engine?
